Christmas cake cupcakes...

Anyone ever made these? What recipe's good? tia

watching with interest. I need to bake "something" for preschool fair, something like this would be ideal.

I do normal cupcakes, but add a pinch of cinnamon and nutmeg to the mix. Pop a bit of mix in the bottom of the case then add a teaspoon of mincemeat then more cake mix on top. Bake as usual and you have mince pie cupcakes. I do them every year and everyone loves them.

They sound great nick I'm stealing that idea.

Not cupcake but Fruitcake Cookies are really nice.

Wow nick they sound yummy. Do you put anything on the top or just dust with icing sugar ?

Thank you, nope nothing else needed just a dusting of icing sugar. The other things I make (god I am really outing myself here) are rolly polly mince pies, roll out shop bought puff pastry into a big oblong. Empty a whole jar of mincemeat and spread it over the top of the oblong then roll so it looks like a swiss roll. Slice into pinwheels push down onto baking sheets then cook as pastry instructions. Again just dust with icing sugar. I love christmas cooking.

I made cupcakes last year with Nigella's sticky gingerbread recipe and a lemon cream cheese frosting. They were amazing

I will try cupcake mince pies and the other suggestions though, maybe one of them will fit the bill

Is it that you want actual christmas cake made into cupcakes.

Possibly yes, I sort of had it in my head to make mini cakes as cupcakes iyswim....maybe I ought to just try that out with some of the leftover fruit at the weekend.

Having said that, there were some nice looking Christmas pud ones about. Maybe they'd do the job.

I was thinking for my dad as my sister doesn't like Christmas cake & he never bothers with one just for himself.
