Do we need gravy with goose?

I've made cranberry sauce, bread sauce and apple sauce. Do we need gravy too?

Yeah you do - but just a standard gravy you'd do with any roast. Not too rich because goose is greasy.

Make sure you keep all that lovely goose fat for doing potatoes! A good size goose should give you enough to last all of 2013! Drain the fat a few times during cooking - about every 30 mins or so!

Yes, apple sauce for pork but DM says it's also nice to cut through the goose.
Zara - yes, have been saving jam jars for the fat!

OK, will do gravy too.

Also pull as much of the fat out of the cavity brfore stuffing/cooking. You can render it down and it saves you having to drain quite so often cooking. Oh and a roasting tray with good high sturdy sides. Do not try to cook it in a disposable tin foil tray!!!
