Put enough brandy, salt, garlic and butter in and you don't need either!

400g (13oz) chicken livers
300g (10oz) butter, diced
1 clove garlic, finely chopped
3 small brown shallots or ½ onion, finely chopped
½ tsp fresh thyme leaves
2tbsp brandy
1/2tsp grated nutmeg
Salt and freshly ground black pepper
50g (1 3/4oz) butter, for topping

...is a great starting recipe. Aaaand must be done with a glass of wine in the hand.
