I've bottled my raspberry gin but what can I do with the gin soaked fruit?

Freeze them and have them as garnishes in cocktails? Would be lovely in a gin/tonic/elderflower cordial concoction.

Whizz in a food processor and add lemonade/soda water (and more booze if need be!) and crushed ice for gorgeous homemade cocktails Smile

Make truffles, I did it one year with the left over sloes from sloe gin.
Mash through sieve first.
Dead easy and got loads of compliments.

Raspberry meringue pie. Sponge fingers, boozy raspberries, meringue. Fabulous. I speak from experience. Or add to apple crumble. Or blend and strain and have as a coulis sauce on puds/sweet and sour. Very long ago ex boyf mother did lots of fruit gins, and then lots of boozy fruit puds. Only good thing about her.
