Christmas Brunch

My father and his wife are calling in to see us on Christmas morning this year on their way to lunch with my step-brother and family. We usually have pancakes as Sunday brunch so perhaps they are a bit ordinary for Christmas day (but then again, everyone likes them..)
Does anyone have any suggestions for an easy (vegetarian) Christmas brunch?

What about muffins - if you prepare the wet and dry mixtures separately the night before you then just need to mix and put in the oven.

For something savoury croissants with cheese - again make the night before and put into the oven for about 10 mins until the cheese is melted.
