Delia mincemeat - how do you get a vacuum on the jars if it goes in cold?

Just freaking out now as I have no vacuum on my kilner jars when I checked them. I did make this exact recipe last year in normal jam jars and it was fine as the jars were maybe hotter. Should I take it out tomorrow and reheat both contents and jars again...

I realise how ridiculous a question this sounds but I will be fuming if the whole lot goes off, particularly when I don't even like mincemeat myself.

Thanks for any advice.

You don't need a vacuum. I've made the mincemeat (presuming it is the one you put in the oven for the suet to melt) several times and kept it for 3 years or so without any problem.

I've got mincemeat left over from last year that hasn't gone off yet, and it was an uncooked recipe. I blame the large quantities of brandy I add to it Grin

Thanks for the advice. Maybe I will just leave it and hope for the best, it is drowning in extra brandy now...
