christmas fudge recipes?

Does anyone have a yummy (foolproof) recipe for christmassy fudge? Im making up food hampers for a few people this christmas and would love to try fudge :) of course i shall have to make up a few dozen batches before hand just for practice Grin

My peanut butter fudge was too soft last year (although highly yummy!). I am going to try one of the fudge recipes on the Good Food site because they have so many comments you can tell if one consistently works. I am also getting a sugar thermometer. Jam, I can judge without but find fudge more difficult.
Plus, I am doing a fudge which will freeze because I don't want to be doing it at the last minute.

I do the caramel and chocolate fudge here from taste.com

I usually only do the caramel and I have missed out the glucose before and it made no difference.

That fudge looks great, love the two tone effect. I'm guessing the glucose would make it smoother, was the texture still good without it?

OOo...I ave a fab choc fudge recipe which I have lost....but I might just have to try that instead. Do you know if it is gluten free? I am guessing so from the ingredients.

Nigella does a great chocolate and nut one you can find with a google and it freezes

Now I'm craving fudge and I haven't even had breakfast. I have a few tins of condensed milk from when it was at 50p in Mr T (maybe it still is? better check) so today might be a fudge day. Just to try it out you understand.....

I made the same one as wildpoppy I think. It's a nigella, and it freezes. It's from her Nigella Express book. I haven't got the book with me, it might be this one

Yes that's the one - it's great. And you could use any nuts or dried fruit. I think I did it with milk chocolate too.
