Recommend me a good gingerbread cookie recipe please.

Our local bakery has a pretty selection of gingerbread biscuits in Christmassy designs....stockings, Father Christmas, reindeer etc. I fancy making some of my own, but gingerbread is not something I tend to bake often and would love to know if any MNetters have a tried and trusted recipe that they are happy to share. Thanks.

I am baking gingerbread houses Right Now and the recipe is lovely.

Melt together 300g butter, 125g caster sugar, 125g brown sugar, 225g golden syrup.

Add 725g plain flour, 3tsp ginger, 1tsp cinnamon and 2tsp bicarb.

Mix to a sticky dough. Wrap in clingfilm and fridge for a couple of hours.

Roll out to about 5mm, cut out, bake 180 for about 12-15mins.

Obv you could divide the recipe!

The one Nigella uses to make Christmas tree decorations is lovely, although I make it with different spices. You cut it out about 5mm thick and it's nice, soft gingerbread but still good for decorating.

300g flour, 1 teaspoon baking powder, 100g soft butter, 100g soft dark sugar and 2 large eggs, beaten with 4 x 15ml tablespoons runny honey. I replace one or two tbsp of the honey with black treacle in order to make it darker. Plus spices - she says black pepper (!), ground cloves and cinnamon, whereas I use lots of ginger, orange/lemon zest, some mace and allspice and only a little bit of cinnamon. Definitely recommend putting the orange and lemon zest in.

You probably won't need to use all the liquid, but put enough in to make sure the dough is nice and soft.

DS 3.5yrs and I made gingerbread men/bells/trees yesterday, I used the recipe from the BBC food pages and it's really yum and simple which is handy when baking with preschooler pressure!

This one is great and we have eaten them all already Xmas Grin

Gingerbread Men
Ingredients

3 oz soft brown sugar
2 tbsp golden syrup
1 tbsp treacle
1 tbsp water
3 1/2 oz butter/marg
1 level tsp cinnamon
1 level tsp ginger
1/2 tsp bicarbonate of soda
8 oz plain flour (approx)

Method

Put sugar, syrup, spices and water into a medium saucepan and bring to the boil whilst stirring constantly. Remove from the heat and add butter and bicarbonate. Add the flour gradually, mixing, until you have a smooth workable dough.
Cover and leave to cool.
Heat oven to 180C (350F)
Roll dough to approx 3mm thick and cut into shapes (add currants if relevant)
Bake on a lightly greased and lined baking sheet for 10 - 15 mins.

Again, if you want soft biscuits, leave them very slightly undercooked.
