Cake for diabetic coeliac disease sufferer?! HELP!

Ladies, can anyone help with a Christmassy cake-type idea which can be eaten by a diabetic who also has coeliac disease? This is for DSFIL. Thanks

Have you tried good food mag online? I think they had a Coeliac friendly one not sure if it's completely suitable though.

You can use fructose insted of sugar and ground almond instead of flour (do a basic sponge mix but add a level tea spoon of gf baking powder), add dried cranberries and almond esense to the mix and you will have something that tastes like a christmasy bakewell. I always find ground almond tastes so much beter than gf flour.
