DH is in charge of the turkey every year, and it seems like he changes his methods every year. But we always cook it at a higher temp (425F, I'm American, so am too lazy right now to convert) for 20-30 min and then turn the oven down and flip it over to breast side down. Let one of that size rest for about 30 minutes. The thing that helps the most is a good meat thermometer. That way you always know when to take it out, which is important, because turkey's never good when you go over. I think my meat thermometer is my most favourite (I'm not too lazy to add the u for you) kitchen gadget ever.

On the BBC Good Food website there is a timings calculator for turkey and other meats.

Checked out the calculator....brilliant...thanks that's just what I was after...I don't know the final weight til I pick it up and most recipes give an average weight and I don't want to stuff mine.....right ...off to type up my Xmas day schedule ....have 14 people over and ned to write it all down so I can at least produce a half decent lunch after a couple of glasses !!!
