champagne cocktails

I'm thinking of doing before dinner cocktails on xmas day and was planning to do bellini's,the only recipes i can find say peach juice or puree.I wanted to use peach schnapps has anyone else used schnapps instead and was it nice?Xmas Smile

That would be quite a lot of alcohol unlike the original recipe, all might be a bit squiffy for dinner!

Champagne and raspberries is lovely.

I have often had bellinis with peach schnapps, just a splash in the bottom and top up with the sparkly

I do think that Archers is pretty sticky sweet though, so I'd not recommend it.

...also as already said, you'll be well away on far fewer glasses than if you use peach juice.

Just checked on their site, it's £1.20 for a 120g pouch.

Tinned peaches are a quarter of the price, just whack them in the blender.

I wouldn't make bellinis with schnapps, it would be very strong I think, and can't think it would taste that nice, tbh.

I agree champagne and raspberries.

I also tried the black velvet in Nigella's book - which is guinness mixed with champagne. Sounds disgusting - and she says it is made with champagne, but if you use asti (!) it is a really nice and quaffable drink.

Santie you can! you can use pretty much any fruit puree.

I've had it in dodgy clubs made with schnapps and it wasn't as alcoholic as it sounds, but it was pretty sickly. Can't beat a fresh fruit one.

Also a big fan of Kir Royale (creme de cassis and champagne).

Raspberry martini topped with champagne is one of my standard drinks, and a cointreapolitan royale (cosmopolitan with double cointreau and no vodka, topped with a "champagne float" ie to fill the glass) is really good. And cranberries are Christmassy...

For me St Germain hits the spot. Sparkling wine and elderflower cordial. Yummy, after. I tried it first time, bellinis became a distant memory.
