Can anyone suggest some ideas for party food/buffet that I can prepare in advance and freeze?

Going away the week before xmas and we're on a bit of an austerity drive this year so I'm hoping to make a lot of party food in the run up to christmas and freeze it.

Hoping the DDs will enjoy helping too.

Does anyone have any ideas of the kind of things we can make? So far I have come up with...sausage rolls. Er...that's it.

Get part baked baguettes and some camembert and cook them.
Little mininsausages

Cocktail sausages (freeze, defrost, cook)
Cupcakes (bake, freeze, defrost, ice)
erm... Thought I would have loads of ideas but thats it! Crikey harder than I thought Grin

If you can get hold of Nigella's Christmas book, all of her stuff has Make Ahead and Freeze Ahead instructions.

Quicke/flans good for buffets - you can line a flan tin with pastry and freeze and then you only have to make up the filling. (Delia has a really good leek and turkey flan recipe for using up leftovers).

Mini sausages as above - buy raw ones and then just mix up some honey and mustard and toss the sausages in it before cooking. V yummy but v easy.

Home-made potato wedges (can't be frozen but so simple) - just cut potatoes into wedges, toss with olive oil, rosemary, salt and pepper and bung in oven.

Also, most supermarkets have 3 for 2 or 3 for £5 deals on their party/buffet food at the moment so you can save money (and work) there.
