Some recipes say let it stand aweek, some 6 weeks. So whenever you're ready I guess. Just did my damson vodka this week, although I think it was supposed to be done a few weeks ago, but I'm sure it'll be fine.

Mine took 4 to 6 weeks to "mature" (can't honestly remember exactly, just kept it stewing until it smelled right!) so you should still have enough time. Definitely worth doing, been unable to try myself but vodka and Xmas pud hating dh really liked it!

Can I ask what your storing it in once you've made it?

I only want to make enough to serve Christmas day so don't need fancy bottles as I'm not giving it as gifts

once you've matured it, strain back into the vodka bottle; you need to get your skates on though

That's what i've done 5318- so much easier than finding fancy bottles! (going to decorate with ribbon and gold labels- not a complete slattern! Wink)

I strained mine through a tight weave sieve lined with a piece of muslin folded in 4 - even now the sediment is visible still.

Sorry moonlight - a milk bottle sounds absolutely fine. I used lemonade bottles but I think just anything you can seal tight.
