i made my christmas cake!!!

its the delia recipe with a few small changes. i dont like mixed peel or sultanas so swapped them for extra currants and glace cherries, and i added some extra chopped nuts as i love them. also, when i soaked the fruit overnight i added a little freshly squeezed orange juice,and used whisky instead of brandy (coz i forgot to get brandy) will feed with a mixture of whisky and brandy though. its just gone into the oven now.

Do whisky & brandy mix? I always just use whisky because we always have some in the house & I won't be left with the rest if the bottle like I would with brandy. I often need to buy at least 3 bottles to see the cake through to Christmas because whisky has a habit of disappearing

I've got my fruit soaking in brandy for a few days - I put in loads of glace cherries instead of candied peel and nuts!

i dont know bagel, one way to find out!!! it smells good i know that much.
ghostie (like the halloween name) i love nuts but cant stand mixed peel so lots of cherries too!!!

Congratulations!

So did I. Last week. The damned thing refused to cook! I had to put it back in the oven three times and then it fell apart when I took it out of the tin Angry. So now it's sitting in a cake box with a greaseproof paper bandage wrapped around it. Hoping the lashing of whiskey will glue it back together and then I'll plaster it with marzipan and icing later.

well it took 4 hours and 5 minutes to cook at 130 degrees in a fan assisted oven and came out absolutely perfect!!!! perfectly flat on top, perfect square cake. well pleased as its the first one i have done entirely on my own (last year mum supervised, and the year before my nan helped)
