I made the Nigella Ultimate Christmas pudding last year and loved it. I think the PEdro Ximinex (??????) is the key. I will definately be making it again this year, it's yum!

Have just steamed my puds, followed Delia's recipe more or less (I usually follow this recipe, adding whatever happens to be in the cupboard, this year it was dried cranberries and pecan nuts). Now have to wait until Xmas to eat them, it's going to be tough!
Up until now I've always used butter instead of suet and the puds have been delicious, this year I've used suet, I'll see if there's a big difference or not.

I think THE pudding is Delia's as well. The only drawback is that it needs to be steamed for eight hours, which is a big commitment. Other recipes I've seen (but not tried) have anything between a three and five hour steaming time.

I always make a spotted dick to use up the leftover suet and currants and pop this in the boiling water under the steamer for a couple of hours to get two puddings for the price of my eight hour steaming session.
