Help,should i have frozen my Beef?

Bought Rib of Beef yesterday, Waitrose butcher said its ok for 3 days.We actually plan on having it for Boxing day.
Butcher did say he personally would be happy to eat it from fridge that day but Waitrose policy is to say use within 3days.
So, should i freeze it and defrost Christmas day or just leave it in fridge(my fridge is very cold and semi freezes all meat).
I am very worried about making my children sick ...what do i do?

I'd probably freeze it, just to be on the safe side, but I'm pretty sure if you don't it will be ok

Depends how you want to cook it. If medium then I would probably go with the butcher's recommendation. However if, like me, you like your rib of beef still mooing, then I would probably freeze and then defrost.

However, I am uber cautious about meat storage since I was poisoned by a friends' home made chicken soup last year :( Never had food poisoning before but OMG, 20 minutes after eating it was not a pretty sight.

Oh dear, i am really funny about use by dates, DH is not, he thinks it will be fine and says quite rightly that we have no space in the freezer.
I however have visions of me throwing very expensive beef away and insisting it smells off if i dont put it in freezer.

I woul dtry and find room in the freezer.
I had to give my dd's the awful job of finishing off two tubs of ice cream to make room in my freezer. :)

def freeze it. Im not one to go with bb dates but if we wont be eating meat within a couple of days of buying, it always gets frozen.

Thanks all,you confirmed my thoughts and its now in the freezer ( DH spent ages sorting it out so would fit) and now i can relax Xmas Smile
