Brussel Sprouts w/pancetta recipe - which is the quickest & easiest?

i thought i'd seen a Heston Blumenthal (sp?) one but can't find it on the Waitrose site now.

needs to be very quick on Xmas day itself so any veterans out there that can help?

Ooh - my mum does one of these. Slice the sprouts, buy cubed pancetta, chuck the lot in a wok with some butter and pan fry for a few mins. Lovely...

I do a very quick recipe which is an approximate version of Nigella's.

Prep and steam sprouts in usual manner.
Pan fyry chopped shallots, pancetta, add hefty glug of Marsala and allow to become syrupy (takes 2 mins tops). Add sprouts and stir thoroughly. Serve.

You can buy frozen, ready sliced shallots in Waitrose.

We don't, no. DH is very fussy about his al dente veg after years of over-boiled everything. Just a chunky dollop of butter, maybe a bit of black pepper. And if you can do that one-handed flip thing with the wok instead of turning the sprouts, you can impress everyone!
