Gingerbread House - how far in advance?

As the title says really . How long before Xmas can I put my Ikea gingerbread house together and decorate it?

Months - pretty sure the biscuit doesn't go off, not even sure it's real food!

I think I made it a couple of days ahead last year - I didn't have any tins big emough to put it in, and I was worried it might go soggy and collapse (after the hours of work I put in!) if left out in the kitchen.
