Stuffing recipes that can be frozen for Christmas

Any suggestions?

Am trying to be organised domestic goddess this year so want to make my own and freeze it.

I've looked online but not inspired yet. Oh and some use liver which is off limits as it's gross and I'm pregnant.

My stuffing recipe is very simple, my DM taught me it when i was younger.

butter
oinions
and spices

I make sausage, apple and cranberry stuffing. It's a good housekeeping recipe.

50g butter
1 onion chopped
1 garlic clove crushed
75g dried cranberries
2 level tablespoons chopped flat leaf parsley
4 Lincolnshire sausages (approximate 275g) skinned and broken up
1 red apple

Melt butter in a pan, add the onion and sauté for 5 mins until soft.

Add garlic cook for further minute

Tip into bowl and allow to cool slightly

Add cranberries, parsley and sausage meat to bowl

Core and chop apple and add to bowl

Season well with salt and pepper and combine.

Then either freeze as a block or roll into balls and open freeze on baking trays, bagging up once frozen.

Chestnut Stuffing.

25g butter, melted in frying pan
half a medium onion, finely chopped and saute in pan
50g bacon, finely chopped saute with onions
when cooked, allow to cool.
half pack or more if liked vacuum paked chestnuts, crumbled
25g breadcrumbs
half tablespoon fresh parsley, chopped, mix with sage or thyme if liked
salt and pepper
beaten egg and some water if needed to bind the stuffing. Add egg last when the mixture is cold, or you'll cook the egg!

Add all to cooled onion and bacon in pan and stir to combine. Needs to be a bit sticky, but not sloppy. Grease a small tin or shallow dish, and pile stuffing in, press it down a bit and smear some more butter over the top which will make a crisp top when baked in the oven. Serve in slices. If there are only a few of you, set some of this mixture aside to put in the turkey if required, freeze this in a freezer bag separately. The dish/tin of stuffing can be covered with foil and frozen. Defrost thoroughly before cooking. The total amount of stuffing should be enough for about 6, if you don't put any in the turkey.
