Veggies come hither

Ok so I am looking for lovely easy dish to serve for xmas dinner. Would help if it didn't look too easy iykwim.
Other years I have done (keeping in mind is Summer here at Xmas)

Pumpkin stuff with lightly spiced rice
Cob loaf stuffed with roasted veggies and feta
A variety of salads (kumara+orange, pasta, rice, green salad+berry)
Spanakopita
Puffed pastry vege bake thingee

I tried a couple of Nut roast things but they really haven't done justice tbh

So load me up with some scrummy and impressive dishes. We have app 25 for xmas but all are bringing a dish and non veggie dh has a deer for the spit.

wow knitter I think I may rotate my requests!!!! That does sound yummy, I can't remember what I went with that year even!!! though I was pregnant with dd and rather ill so was probably an old reliable.
