Since Wednesday night my 2 year old is vomiting violently after every single feed (breastfed). She's fine with food during the day and is reluctantly taking tiny sips of water or ice cubes.

Every single night though she is throwing up after her bedtime feed, then vomiting throughout the night. We can't keep up with the washing fast enough! We are now on night 3 of this and tonight was akin to the exorcist!

Called 111 on Wednesday when it started and was told someone would call within 2 hours. Nobody did. Gp econsult said they will call by Tuesday (!).

I suppose my question is....has anyone had any experience of this? She's absolutely fine in herself all through the day. Then the projectile vomiting starts after fluids which makes her distraught and then she crashes out asleep.

It just sounds like a tummy bug from what you've said, often worse at night when laying down and with a full tummy - food doesn't digest well when you have a bug.
I would suggest keeping food light and simple and not too close to bedtime. Can you try to keep the bedtime breastfeed brief, move it further away from bedtime, or stop it altogether for a few nights until her tummy has settled.
As long as she's taking some fluids through the day (it doesn't need to be loads) don't worry about food. Certainly don't encourage or try to tempt her to eat if she's not keen.
