12 month old's stools

Sorry for the TMI type post...

My DD seems to swing between very soft but not quite runny stools, or quite hard ones that make her cry (just because she's not used to it being harder I assume). Is this usual? It's usually soft (as in wouldn't hold a shape), then will go very soft and more like baby poo for a week or so, then hard for a few days. Is this normal?
My DM seems to think I should take her to have her checked but I don't know if that's OTT or not, having absolutely no experience with kids! For info, she's been off milk totally since 8 months so it's not to do with changing to cows milk and had no change in diet over last couple of months.

Wow why did she stop milk at 8 Months? Children need milk.

She just absolutely refused. Wouldn't let a bottle in her mouth. Caused me no end of worry and stress as she would only drink water and had always been fed to sleep. I had to give her a pint of dairy a day without milk, it was definitely a challenge!

Well I think then you need to look at her diet as the cause.
Try her on milk again - sometimes babies go on milk strikes because they are teething etc - it absolutely doesn't mean you should give up feeding her milk at 8 months!
Use a sippy cup and just give her it as a drink.
If she's allergic etc you need to get it properly tested and dealt with but doesn't sound like she is so you need to reintroduce it.

Twist she's now 12 months. She has never drunk milk again, either formula or cows milk. Tried it warm, cold, bottles, cups, even with milkshake flavouring. Honestly, it's just point blank refusal. She will have it in cereal / porridge etc but just will not drink it. Had her at doctors and with health visitors multiple times as I was so worried. We tried, I promise!
Am going to try and get her in to the docs re stools, just in case. Thanks.
