Our DS is also iron-deficient anaemic - and we've been told he has to stay on iron syrup for a good 12 months minimum as it takes the body a long time to build up the stores (ferritin levels are the body's iron stores).

Not sure on what level they should be for a 15 month old and there are lots of reasons for low levels - malabsorption is one but also growth spurts can decrease iron stores. Other reasons are around so if you're worried, go back to the GP and ask what can be done or the paediatrician at the hospital if you're seeing one.
