90s childrens book help

I’m looking for a book that I had as a child but I can’t remember the author or book title. I am hoping if I describe what I remember someone knows the title. A mum a girl and a baby in a pram go to the beach and take the girls friend with them. They go by train and carry all their bags and buckets and spades - the struggle is real. They have a donkey ride, I’m sure something traumatic happens to the sandwiches and then it starts raining heavy so they go and eat soggy sandy sandwiches in a bus shelter. Think one of the girls was called Alice ? I’m sure the book cover had a picture of two girls on the donkeys. 🙈hope someone knows what book I’m on about cos I have searched google loads and not found it lol

Yeah my first thought was Josie Smith goes to the seaside. I remember the photograph on the cover. Was it yellow or pale blue?
