Thanks for all your advice
I'm not remembering to write down everything I eat every day but I am eating reasonably healthily I hope and I'm doing well at going to the gym 3 times a week

Well, you are going to be asked about what activities you would do with the children so how about a 'model timetable' which shows how you would plan a balance of different activities over a week?
I interviewed one nanny who had a sheaf of photos of other people's children - it was very tedious to look through and told me nothing about how she would look after my children (except that she had only looked after girls previously, and sure enough her first question to me was 'can ds stay in his day nursery so I only look after dd'! so I don't recommend lots of photos.
Also a list of things that you are happy cooking and an example of a balanced menu.

I've been to see a childminder who had a great folder with photos of the children doing the different activities, a menu plan and an activitites timetable..was very impressed (shame ds didn't like her )

I tend to collect leaflets of places to visit and keep those in a folder. Local parks/playgrounds, countryside walk maps, details of toddler groups, activity groups such as gymnastics, all sorts of local things.

I usually include some typical menus, though rarely have actually a meal based on those menus as in reality I don't have the ingredients and thus have to come up with something else. However being able to show a selection of menus and recipes can help to show you know how to cook, rather than reheat ready meals!
