Prospective childminder gave me multiple numbers to contact for references, what should I ask or should it just be like a review? Should it be requested in writing via email for records or is verbal OK?

Just phone up and have a chat. My references are all parents of children I've cared for. I'm sure they'd be much happier to have a chat than to be asked for a written reference.
