Nanny vs other options

My first post - apologies if not to the point.
We have a 6 yr old in full time school, and had a nanny up until 7 months ago.

We plan on rehiring and offered the job to the same person - on the first day - no show with sickness(may be a bit long term).

1. Am I bound by the employment contract - no contract has been signed, only offer of appointment issued.
2. We need before school(from 7am) and after school care till 7pm - Is there any other option?

The total working hours comes to 80 hrs a month.

If it was a new person i'd say definitely not as they should have a probation period but as same person then maybe? You probably should call your employers liability insurer and ask the legal advice line
