If I take on a self employed assistant can I still make her sign a contract? Do I have to pay her holiday?

In what way would they be self-employed? Would it just for occasional ad-hoc days?

Two days a week
I spoke to tax office etc but didn't ask about a contract

I don't think she would be self-employed then, unless the assistant is also registered as a childminder?
