The fresher the egg the harder to peel, how do you peel yours?

I have discovered since we got our hens that a hardboiled egg is harder to peel when it's really fresh. The outer layer of white always sticks to the shell.

Anyone found a way to counteract this prob?

Keep them in the fridge or not?

Put the egg in cold water and then boil? or boil the water first?

Sing the national anthem whilst collecting the egg............i don't know, but it's driving me mad.

Put a drop of oil in the water when boiling them..the shell comes off a treat..all in one go, very satisfying!

how does that work turkey? Surely the oil floats on top of the water?

TheDuchessOfNorksBride · 19/05/2008 22:42

I don't get the white sticking to the shell but I do find the white falls off the yolk.

Carmenere · 19/05/2008 22:44

I roll the egg to break the shell and then rinse it under the tap as I peel it. But I will be trying oil in the water from now on.

I knew my days slaving as a waitress would come in useful! I used to work at a restaurant that had a salad bar and my job was boiling the eggs and peeling them! Great bloody loads of them.
We used to put a spoonful of vegetable oil or olive oil in the water as they boiled. God knows how it works, but it does! I used to get in a right mess with bits of egg and shell everywhere if I forgot to put the oil in.

tortoiseSHELL · 20/05/2008 21:31

Ooh, will try that with the oil!

Madlentileater · 20/05/2008 21:33

Has anyone tried it yet?! Has it worked..am I The Queen of Boiling An Egg?

Forgot to say, once the egg has boiled leave it in the water and oil to cool down, then peel it.

mel2005 · 25/05/2008 09:09

i keep them in the fridge and usually wait until they are a few days old before i boil them, about five days is usually good, i always find the blue eggs harder to shell. but i am boiling mainly for dippy eggs for the kids breakfast so i only take the shell off half the egg and i cant leave the eggs in the water to cool as they would go hard.
i will try the oil idea though, it might sort out those bluees.
