OK, I'll kick this off by recommending the Outwell Minnesota 4.

link

Pros:
it stood up to lashing gales and torrential rain without a single leak
has SIG, and you can turn the 2 bedrooms into 1 big one for cosying up
is easily big enough for 4 of us, but not too enormous for a weekend/festival - (we also have a Montana 6 which would take for a week's trip.)
easy for 6'2" DH to stand up in
has windows on 3 sides so can be very light.

Cons:
the poles are heavy (which is probably what makes it strong).
needs 2 people to put it up.

Please add your own recommendations!

i'll recomend my vango beta 350.

here

pros

simple enough to put up by yourself, very quickly, didnt time it but it was quicker than putting up the old tent with xp to help.
light colour so although small didnot make me feel clostraphobic
enough space in bedroom for double bed and loads of luggage
has 2 windows in porch so lots of light coming in
with stood very strong winds
kept torrential rain out
we didnt get cold in it
it was in my budget!

cons

cant stand up in it
