We really like the idea of touring Europe in a converted van. There would be three of us - me , my husband and our baby girl. We might start in April and drive down through France to Spain and end in October time. Need lots of advice - van recomedantions, places to stay, how to get water, etc...

Such a big topic! There's lots of advice on forums and groups online, maybe start with a few motorhome/camper blogs to see how others do it. I like reading the Our Tour blog, and I can cheat by linking to their Other Blogs page to give you lots of links with just one - ourtour.co.uk/home/fellow-travellers/

One thing you've said that immediately stands out is the intention to travel in Europe from April to October. Does at least one of you hold an EU passport and will be exercising FOM rights? - Brexit places restrictions on the amount of time UK citizens can visit EU countries. It's a rolling 90 days in 180, so spend 3 months continuously in the EU and you'll have to leave for 3 months before you can return again.

As above loads of people have done it, number one is insurance and recovery.
This site is a bit more world wide but I am certain it will be helpful

Remember what the temperature can be like in those places in summer. Being trapped in a van in 30-40 degree heat to sleep as as only place for shade in the day with a young child sounds like my idea of hell.
