Spanish omelette with all sorts of veg and some meat (bacon pieces - fry those first and use the fat to fry the onion etc for extra flavour!!, chicken, prawns...) and some grated cheese on top. Slice like a pie and enjoy with salad.
Tin foil parcels with some salmon pieces, onion, carrot and potato all diced up together and seasoned, cook over a fire or BBQ. Can mix up the options, use meditteranean type veggies, chicken, prawns, ...just make sure there is a little moisture in there to help it all cook (a tablespoon of water, or maybe wine for adults!).
Skewers on a BBQ, mixing meat/fish and veggies. If have a BBQ or fire, can wrap potatoes in foil to bake at the same time.
YY to couscous as you only need boiling water for that, and can cook a sauce on your ring.
Chilli con carne served in a pitta bread pocket or a packet of doritoes opened along their side (not at the normal top opening).
Another staple when we camp is buying a hot rotisserie chicken one evening and a fresh crusty baguette, and enjoying hot chicken sandwiches with salad.
