I’m taking DC away on my own for the first time tomorrow. Does anyone have recommendations for easy one pot meals?

Pasta/pesto/peas will definitely be one night...

Won't win any gourmet catering awards but we often do a big 'frittata' in a pan with onions, peppers, tomatoes, ham, eggs and cheese. Serve with crusty bread.

Alternatively get the butcher to cut some really thin minute steaks. Fry quickly and serve in a baguette with mustard.

Tins of beans with sausages in them are also really easy.

A family opposite us cooked boil in the bag kippers one evening and made them into sandwiches. Smelt wonderful.

Depending on where you are staying a pizza/curry/Chinese delivery might be a very easy option. Smile
