Camping stove - single/double?

We are looking to buy our first stove. Both camped as kids and young'uns. We borrowed a very old double stove so far.

Now we are buying our own kit. My mum reckons that a single is best, one that folds into a suitcase. But I'd appreciate views and suggestions. We are two adults and 2 kids (7 and 5). Weekends and Mo - Fri trips. Building up to whole weeks!

Get two singles?

I've never had a double, but the gas cans for them look like a ballache compared to the standard ones you stick in a single.

Two singles or a Cadac Carri Chef II (expensive but possible to buy secondhand on gumtree or ebay). It's very large and has a range of surfaces: BBQ, paella pan, chef pan, grill pan, pizza stone, and more. Ours is set up in the garden when we are not camping.
