We do a lot of BBQing and cooking directly over the fire. Trad bbq food, or if you have a BBQ with lid, like a Go Anywhere or Smokey Joe, wrap cut veg (toms, mushrooms, courgettes, peppers, aubergine) in a foil parcel with butter or olive oil, garlic and herbs, and cook slowly with lid on.
Camping Quesadillas. You can do a lot with those packets of tortillas. Place in frying pan, spread with tomato relish, sprinkle on grated cheese or sliced (the bags from Lidl
Are ideal and cheap), add ham
if you want, put another tortilla on top, fry for a couple of mins, flip and cook on other side, sorted.
You could use the mushrooms from the Lidl anti-pasti jars, olives, chillis, or a tin of minced beef etc.
Also the same principle with Nutella and banana in ready made pancakes.
And if you don't overfill you end up with a pretty clean pan, too. Just wipe with kitchen roll !
