Dreaming..... Does a van exist that is not very tall, no more than 1.6m but would have a pop-up to compensate?

There is a campervan called a Berlingo, I don't know the height but it looks like a large car, you could try a search on that. It has an elevating roof and sleeps two (very good friends).

Maybe too small, but Nissan have one NV200 camper. Also Lunar Vacanza might be worth a look? Not quite as appealing as a VW but both a lot less money!

Mazda Bongo/Ford Freda?

I think you might have to get your own converted - something like a Berlingo - I'm pretty sure a bongo is nearly as tall as ours which was 1.9m unconverted and I now don't take under a barrier less than 2.2m.
