I'd like to go away for one night a few times this year.

What's the bare minimum for one night?

Tent, pegs, groundsheet
Sleeping mats, bags, elec blankets and pillows
Wash kit & clean set of clothes
Elec hookup
Suitcase stove
Kettle
Bowls, cutlery, cups
Pans to reheat previously prepped meal
Food & drink
Chairs for adults
Picnic blanket

If it's one night I'd take what I needed to make a cup of tea and have fish and chip dinner and cafe breakfast.

The annoying thing about camping is that it takes as much stuff to camp for one night as it does to camp for several. Unless as Thumbcat says you choose to signifcantly simplify food. Plus of course less clothing.

Yeah that sounds about right. We did it last year with just breakfast stuff and had a pub supper. We took our small cool box with milk and oats. Didn't bother with wash stuff except the toothbrushes, but we are skanky.
