Hi,

We're going camping tomorrow (me, DH, DDs 4 1/2 and 7 months) and I'm looking for quick and easy recipes please, as prep time is at a premium with DCs. Also to complicate matters, DD1 doesn't like stew-type meals.

Obviously, we have the obligatory cooked breakfast/fry-up and a bbq, but other than that I'm badly in need of inspiration!

All ideas gratefully received Grin

We do meatballs on camp. A pack of turkey mince, some grated cheese, an egg, a slice of bread, crumbed up, mix together with your hands, roll into meatball sized balls, fry in a little oil. Put over a jar of dolmio type sauce, serve with pasta. Really quick to make and my kiddies love it.

We take a wok and have stir fry veg and noodles (with prawns for the non veggies), I buy those packs of pre chopped mixed stir fry veg so virtually no prep and minimal washing up.

We also take (touring caravan so we have a freezer) packs of frozen mixed veg to add to tinned tomatoes for a quick pasta sauce, cook some pasta, grate some cheese and voila. I'm pretty sure you can buy similar in cans or buy frozen on the day you're going to use it and it'll be fine if it defrosts.

Tins of ratatouille also really handy, add a tin of chopped tomatoes and reduce till it thickens, good as a side veg or with pasta or rice.

You'll note my attempts to make sure we all get some vegetables down us while on holiday to counteract the ice creams and cake :)

I know it's not really cooking, but we get these pouches - they are delicious and we either have them with chunky bread or mix ready mad rice through them and heat.

Whe he is away mountain walking, my OH burns thousands and thousands of calories, so he mixes a chili one of these with a pouch of rice and a tin of baked beans and sausages and serves the lot with some crusty bread. followed by some cake and instant custard.

Omelette with salad and fresh bread?

Pasta with pesto

Fry onion and add chopped mixed veg ie carrot and pepper, add rice and stock and simmer with a lid on till cooked. Either stir in some cheese at the end or serve with cooked sausages. Or just add chunks of ready cooked smoky sausage and heat through.

We had wraps with fried strips of chicken breast - kids had sweetcorn and grated cheese And we had salad and coleslaw - very easy and really yummy plus they are also really nice cold for lunch

Minimal cooking meals:

Fry an onion
Add a tin of M&S chunky chicken in white sauce, and
A Jar of sun dried tomato and garlic pasta sauce (a strong one)
Mix in some pasta, possibly grate a bit of cheese on top.

Or another pasta one is simply onion, shredded ham, peas and a bit of cream. Again, grated cheese if you like it.

If you're able to cook, I always find Chilli is easy enough, or a curry. I take spices with me, or a jar of curry paste.

Sausage and bean hotpot. Or a breakfast variation - sausage, bacon, beans, tin of tomatoes. When cooked crack eggs on top to cook - delicious.
Anything that can go on a skewer - prawns, chicken, tomatoes, mushrooms - served with rice

Has anyone mentioned chorizo? Cut into pieces, cook, stir into couscous/rice/pasta, with some cucumber/cherry tomatoes. Quick and tasty.

A bit late but we have done

Risottos
Paella
Spaghetti bolgonaise
Stir fry
BBQ and salad
Omelette
Scrambled eggs n toast
Pasta pesto
Fried new potatoes with garlic, onion and sprinkled with Parmesan

Have just had twelve days camping in France, this was our menu for main meals, all cooked on a caeca skottle and camping stove for pots/pasta
