long lasting cakes for camping

going camping on Friday for 8 days. I want to take enough cake to feed 80 (!) people at least twice. Any suggestions for simple cakes that will still be edible a week after being baked? Also not too expensive as will be baking in bulk!

I can freeze some, but not got much room in the freezer!

Cake for 160?????? er good luck with that....

Off the top of my head Madiera cake, chocolate brownies and banana and chocolate loaf are pretty long lasting but Christ you would need to make at least 12 to feed 160.. Probably more. Eeek

Gingerbread is a good keeper and easy to do big batches of.

Also flapjack.

We used to make a choc fudge cake which kept really well. Will see if I can find the recipe for you.

Also bakewell tart made as a tray bake keeps well.

Rice crispie cakes are good too. In my previous life I used to cook and bake for up to a hundred people at a time.

Beware things with apple in particularly as ime it tends to go mouldy the quickest.
sorry can't find my recipe for the choc fudge cake now.
