Lunch Ideas

I am calorie counting and struggling for lunch ideas!
I’m veggie and time poor during the day so things that can be made quickly or in advance are good!
Any ideas would be welcome!

For lunch at the moment I'm having one of the following:

Low fat hummus and veg sticks
Soup
Low fat cream cheese on a ryvita type thing
Jacket potato and cottage cheese
Falafels on a large salad

I eat a lot around variations of
Wholemeal bread + avocado or soft cheese or hummus + salad leaves or tomatoes or red pepper
All supermarkets are selling mini cucumbers atm - they are very handy and nicer than the big ones.

-I don’t tend to eat breakfast so love poached/scrambled eggs with a bagel thin or ryvita with marmite and veggies.
-I batch cook and freeze soup: corn chowder, bean and tomato, pea and chilli or chickpea and aubergine are my favourites. Most can be brought tinned from the supermarket to (where I got the inspo from).
-BOL pots/Itsu noodles/Sainsbury's blooming good pots are really nice and all low cal.

Thank you for the ideas - food shopping tomorrow so will be getting stocked up.

All of these options sound great. I had kind of forgotten about cottage cheese and how filling it is and low calorie! Eggs will be good - I might boil a few in advance to have in salads.

I work from home, with a lunch break, but use it to walk the dog so sometimes end up rushing to make lunch and grab all the wrong things!

OP, am WFH and my workplace don't respect lunchtimes when booking in meetings Hmm add in the school runs, I am always rushing and usually eat a biscuit for lunch! Went to tesco last week and they have such a great vegetarian range. Tasty and saves time.
