Help with 18 month old eating - any inspo?

My 18 month old pretty much eats the same stuff all the time, he loves toast and butter, cheese and onion rolls, crisps and yogurts. Basically loves bready and pastry.
Now and again he will have a little meal like fish pie or chicken korma but has to be in the mood for that and i would feed him it. fruit he will only really eat through a fruit pacifier thing he has when he was smaller.

Any tips on how i can get him to eat more of a variety and get him used to textures etc.

Things on toast? Like avocado or mashed banana
omelettes, scrambled eggs
picky type plates are good for not wasting stuff if you separate it up
pasta?
sweet potato and carrot mash
tuna fishcakes

just keep offering different food, anything from stir fry to salads to fish cakes
