Hiya,

Really struggling for quick easy meals for my 11 month old to eat. He likes to eat with fingers and after a day at work I have little energy for fancy meals. Any ideas for quick and easy? Thanks in advance!

What do you have Fluffy? If he’s in childcare is it just a snack or light meal before bed?

He is looked after my mum. She's feed him once a week but it's the other two days I'm struggling with (I'm part time).

Whatever you’re eating. Quick things: omelette, scrambled eggs with toast, leftover chicken, sausages, veg sticks, fruit, yogurt, cheese cubes, crackers, breadsticks, hummus, pasta, soup......

I find those fresh filled pasta really usefull. Couple of minutes in a saucepan woth some frozen broccoli, cut in half and serve. Slices of bread of a halved roll topped with tomatoes and cooked sweetcorn and cheese - grill to make very quick pizzas. My dd, nearly 12 months is happy to eat salmon which has been cooked and cold so that served with some cucumber, a little slice of bread. Would he eat soup? I make a very thick veg soup, add a bit more water and salt to my bowl and serve it thick for dd - its really baby food but it is a way gor us to enjoy the same meal! Meals after work are definitely the most difficult, especially when so small. Dd1 is three and its a but easier with her as she isn't so tired.

Lots of things he can have that won’t take too long and will feed you both. How about sausage & beans? Just cut the sausage lengthways otherwise it can be a choking hazard and stick him in a long sleeved bib Smile

Omelette is quite quick and carbonara is quick too, it’s usually ready I. 10 mins.

Could you both have leftovers if it’s for 2 days? So if you make something like a cottage pie or a roast dinner on another day, coukd you just cook extra?

If it's only 2 days can you freeze what you've had on other days and reheat. Nice and easy then.
