Interesting food ideas for toddlers?

My son is 18 months and is quite a good eater but can be a bit unpredictable at tea time! One day he’ll wolf a certain food down and then the next he won’t entertain it. He has this gross habit of just opening his mouth and sticking his tongue out if he eats something he doesn’t want - which he might well have eaten yesterday! I absolutely hate it when he does this as it’s conpletely minging - it’s like he wants to rub it all off his tongue!

He loves fruit so much and he really likes pancakes and such. Veg he is picky with and will eat it as long as it’s off your plate and not his. If you give him mash and he doesn’t want it it’s back out with the tongue!!

Can anyone give me any suggestions? I do give him what we have at times but he doesn’t always like it or it’s not appropriate like chilli or curry.
