1 year old won't eat reheated chicken

Hi does anyone have any recipes for chicken dinners? He will eat chicken if it is freshly cooked but doesn't like reheated chicken dinners. I think it's because the chicken goes a bit dry. I need to make dinners in advance for when he is in childminders

I roast a chicken and get a few meals out of it for ds

A curry
Macaroni cheese with broccoli and chicken
A onion cream sauce with spinach and chicken. Served with veg and mash and sometimes as a pie.

My ds likes soft chicken and a roast chicken seems to stay moist in the sauces.
