Do I just keep expressing larger volumes?

I'm trying to breastfeed my small and slightly preemie 6 day old. we haven't managed yet so I am mainly giving him expressed breast milk in a bottle. I express after a long go on the breast at each feed (3 hourly roughly).
I'm getting more and more milk each time I express, now up to 150ml. DS managing about 40l-50ml per feed.

Do I just continue and allow my supply to increase (where will it end?!), or should I hold up a bit? And if so, how? By skipping sessions expressing or by taking less off when I express?
Thanks in advance from a clueless first timer

I'm no expert but it's down to supply and demand so the more you pump the more you'll get. In a way if you're trying to establish feeding (expressed or otherwise) regular and often os good.

Thank you Boudicea, I think you're right, I'll carry on expressing as often, but maybe stop when after a certain amount of time.
