I've been expressing since december but 1st Jan i got mastitus and now i have thrush :( so i heard you have to throw all your breastmilk away that you have frozen incase it contained thrush so i threw any away i had since 1st Jan and it was 30oz!! I also throw about 4oz away every 2 days as i express some and leave it in the fridge "just incase" but so far have never used it....

is it normal to have this much 'spare' milk and what should i do with it? Build a big supply so when i stop bf i can continue through expressed? i dont want to stop expressing as i think this is why i got mastitus in the 1st place.

You'll have extra as long as you keep expressing as the demand means extra supply. If you want to stop, you'd need to do it gradually to avoid mastitis.
