My 6wk old is doing well but not putting on weight as quickly as she might. She's currently only taking between 3-4oz per feed and sometimes can't go 2 hours without wanting more (then usually only takes 2 oz).

She'll sleep for long periods at night (4-6 hour chunks) but is napping less and less in the day.

What can I do to get her to take more at further apart intervals?

is this FF or BM? I assume FF?

What exactly is her weight and weight issues? It's normal for babies to go up/down 2 centiles, would focus more on nappy output.

Is it a problem her not going more than 2 hours in a day?

Unfortunately many babies turn into non/poor nappers and mums resort to lots of pram/sling action to get them off. The sleep forum might also be useful.
