Hard dough bread - has anyone made this?

Have the urge to make one (not sold where I live).

I'll look for a youtube recipe but just wondered if anyone has made it and how it came out.

Baking everyday bread is problematic for me 🤣. I have nothing of help I'm afraid.

I once stayed with my uncle's family in Barbados
A cousin baked hard dough bread every few days. Heaven 🤤. Found anything? The ones I buy in the shop are so dry nowadays.

Used this one as I loved that she featured her granny who was visiting.

I baked bread a couple of times years ago so not a pro but the instructions were easy to follow. You just need to have time because of the proving but the actual hands on time is not long. It takes about 10-15 to combine ingredients/knead (less if you have a machine dough hook and then it's a breeze), 45 mins first prove, 60-90 mins second prove and 25 mins to bake. Of course you're just getting on with life while all the proving is happening.

One thing she did not mention (or I missed) is that you must prove in a warm place. I forgot about this from previous experience and there was little rise after my first prove. For my second prove I placed the dough in my oven with a bowl of boiled water and that created a good temp for the dough to rise.

I'm telling you all this for when you bake it yourself as I'm sure you will 😉

It tasted really good but I need to experiment a bit more as the texture although good was not as tight as a traditional hard dough and was a bit crumby but that could have been down to my proving technique.

Oh that bread looks gwood! Just the kind we like tbh. We really love hard dough bread in this house and haven't had it for some time due to Covid.

When I get brave, I'll try. My flop to success rate with bread is shocking Grin

The video is a gem - the presenter had a lovely manner and such good energy between her and her granny. She was hilarious at about 8:28 - "Mama slap it!" 🤣

Seriously, don't worry - the video is a good guide, just follow it. I think the only thing to make sure when doing bread is that you don't kill off the yeast so don't add too hot water and of course note the point about proving in a warm place.

You may end up baking bread every few days like your relatives in Barbados 🤣
