My 3yo will not listen

I have a 3 year old girl. Up until the past few months we have gotten along beautifully and shes always been sweet and listened really well.
Since starting school part time, I have had endless amounts of trouble from her ranging from suddenly refusing to go to the toilet and peeing on herself to full blown screaming at me for asking her to eat her dinner.
She will not stop running and climbing indoors and regularly injures herself minorly from her actions. She barely bothers to eat her meals and wont go to bed at night.
Her behaviour is starting to really concern me because she is acting like a whole other child and no consequence or positive reinforcement will get through to her.
The only time she is ever calm is when wearing a headset and listening to something with almost nothing to set her off - calm music or boring videos, but I cant let her use technology too much or she will learn to rely too heavily on it and theres more than enough of that in the world.
Im exhausted and struggling to deal with even the simplest of things because at every turn I'm having to argue with this tiny version of myself that has taken on the temperament of a rabid dog. I dont know whether im here looking for advice or just to get this off my chest but I welcome any input.

I think, in my very limited experience, one of two things could he going in here.

1 is that she isn't coping at school. It could be a temporary transition but I would do the 3 year Ages & Stages and the 3 year Social & Emotional Ages & Stages and see how she scores.

2 is the very slim chance that this is down to PANDAS.
