Most young people/teenagers seem to take off their shoes without untying the bow. Do you see that as well and why do they do that?

Quicker.

It has become habit in a lot of households that people no longer wear shoes indoors, so they are taking shoes on and off more frequently, so they have the laces sorted so they can do this.

I'm early thirties and do this.

If you were born in the 70's or 80's, it was in the stupid time where everyone thought shoes had to be tight fitting around the entire foot forcing it into a particular position, where the exact width was demanded to be known and it would literally be too tight to take off without undoing.

Since then, it's become increasingly clear that this is pretty shit for the foot, and more flexibility, more freedom is what you need in your foot, so wide shoes with lots of flexibility and they don't need to be tight. Hence you can take them off easily and the bow is just there for adjustment of how tight you prefer them / the size of your foot.

So younger people don't have screwed up feet or the hang-ups brought on by those years.

Modern shoe materials also tend to be more flexible anyway making it easier too. But they're doing it right, not us old folk.

DH and the kids do this; I don't. He was brought up in a house where you took your shoes off when you came in; I wasn't. Does mean they take longer to put their shoes ON though, because they have to untie the laces first!
